INGREDIENTS
1 tablespoon, il Fustino extra virgin olive oil
1/2 medium, red onion – chopped
salt and pepper
1/2 teaspoon, dried thyme
6 boneless skinless chicken breast halves
1/2 cup, il Fustino Blackberry Balsamic vinegar
METHOD
- Heat olive oil in a large skillet, add onions and saute until translucent
- Season chicken halves with salt, pepper and thyme
- Add chicken to skillet and saute approximately 6 minutes per side or until golden and juices run clearly
- Remove chicken from skillet and keep warm
- Add Blackberry Balsamic vinegar to skillet and season to taste with salt and pepper, stirring constantly
- Bring sauce to a very gentle boil
- Plate chicken and spoon sauce over chicken to serve
