MUSHROOM AND SPINACH FRITTATA

Ingredients

  • 4 eggs
  • 1/3 cup, sliced mushrooms
  • 1/3 cup, spinach
  • 1/4 cup, gruyere cheese
  • salt and pepper
  • 3 tablespoons, il Fustino Mission EVOO

Directions

Heat EVOO in a medium-sized skillet.

Saute sliced mushrooms and spinach until almost cooked through. In a separate bowl, beat eggs and season with salt and pepper, fold gruyere into egg mixture.

Pour egg mixture over the top of the sauteed vegetables.

Cook uncovered over medium heat for 5 to 7 minutes until eggs are cooked through.

Slice and enjoy!

CHAMPAGNE BALSAMIC MARINATED FRUIT SALAD

Ingredients

  • 2 cups, mixed berries (we used slices strawberries, blueberries and raspberries]
  • 2 tablespoons, il Fustino Champagne Balsamic
  • 1 tablespoon, honey
  • mint for garnish

Directions

Whisk together the balsamic and honey, pour over mixed berries and toss to coat.

Let berries sit in the balsamic mixture for at least 15 minutes.

Garnish with mint and serve.

CHERRY TOMATO AND GOAT CHEESE GALETTE

Ingredients

  • 1, prepared 9 inch pie crust
  • 1 pint, cherry tomatoes
  • 1/2, small red onion
  • 1 tablespoon, dijon mustard
  • 2 tablespoons, il Fustino Mission EVOO
  • 1/3 cup, crumbled goat cheese
  • salt and pepper – to taste

Directions

Preheat oven to 400 degrees Fahrenheit.

Thinly slice red onion, and half all the cherry tomatoes.

Place the prepared pie crust flat onto a parchment paper-lined baking sheet.

Spread the dijon mustard over the crust – leaving about an inch and a half to 2 inches bare on all sides.

Scatter sliced onion, cherry tomatoes and crumbled goat cheese over the mustard in the center of the crust.

Fold edges of dough up and over the edge of the filling. Brush the crust with a little more EVOO. Sprinkle salt and pepper over the top of the galette.

Bake for 40-45 minutes or until crust is golden brown.

Slice and enjoy!
