TOMATO CARPACCIO

Ingredients
- 2 large heirloom tomato
- 1/4 small red onion – diced
- parsley (for garnish)
- 2 tbsp, il Fustino Cabernet Vinegar
- 1/4 cup, il Fustino Picual EVOO
- salt and pepper
Directions
Slice tomatoes into thin slices and arrange on a serving plate.
In a small bowl, whisk together vinegar, EVOO, and season with salt and pepper.
Top tomatoes with dices onion and parsley. Drizzle the vinaigrette over the top of the tomatoes and serve immediately.
